The real answer is 'whatever the plot requires this episode'.

Excuse me, but I think you'll find that the only Enterprise to truly count as the Original Series Enterprise is the NCC-1701.
While Kirk, Chief Engineer Montgomery Scott, and Pavel "Nuclear Wessels" Chekov all set foot aboard the NCC-1701-B, it was never commanded by, or crewed by the original crew, nor was it ever a main "character ship" in the way that NCC-1701, NCC-1701-A, NCC-1701-D and NCC-1701-E have been, and thus can not count as an OSE. The NCC-1701-B is no more the TOS Enterprise than the NCC-1701-C is the TNG Enterprise!
Likewise, while the NCC-1701-A was crewed and commanded by the command staff and crew represented in the original series, it only ever appeared in the films, several years after the end of both their original five year mission, and the cancellation of the series, thus, despite qualifying for TOS status in the timeline, it does not qualify as an OSE.
Therefore the only logically possible answer is that the OSE is the NCC-1701.

In summary, death was too good for him. What sort of geek gets stumped by such an obvious question?

I'm glad... I'm pretty sure I sprained my geek gland writing it, so I'd hate for it to have been a wasted effort.
